ABOUT US

Our bakery has an international flair,

offering fresh breads, pastries and desserts

from a variety of different countries.

At Reis' Bakery you'll find fresh bread such as

French baguettes and delightful sourdough, as well as
flakey croissants, German schnecken, kouign-amann, and
smooth desserts like Mont Blanc, just to name a few.

From the Baker:

I started baking about 15 years ago and quickly discovered that great pastry products don't need to be overly sweet nor contain any artificial ingredients in order to be great. Ingredients are key!

Using inferior ingredients will yield inferior results.

About
Making Croissants
This Is How We Do It

THIS IS HOW WE DO IT

Flaky crust before n after.JPG

Having lived in various European countries, our family was introduced to many new cultures and cuisines. Being "foodies" who always enjoy tasty foods,  and wondered why pastries and breads are dramatically more rich in flavor, yet light and not overly sweet?  The answer is in the ingredients and preparation time.

A croissant which can be prepared, baked and served in the same day will not give you the flaky layers and loose crumb that is characteristic of a French croissant. The mixture, dough fermentation, crafting the actual croissant, proofing and baking take no less than 24 hours to be done,  properly.

Some of our creations

Making Puff Pastry

So how do we do it? -

We use only the best ingredients!

Flour - All of the flours used are Unbleached, Non-bromated, non-GMO, imported French flour

Chocolate - We use French couverture chocolates & cocoa powders, and Belgian chocolate

Fruit Purée - 100% fruit, non-GMO, no preservatives or additives

Milk - Organic

Butter - Imported French 82% butterfat, and 84% butterfat (aka "dry" butter) butter, which gives the croissants that "buttery" flavor

Then we prepare, bake/cook, and "build" each creation.

Menu

Made with the finest french flour, imported ingredients and no preservatives, here is our current menu.   (* denote availability only on certain days)
